These cheesy potatoes are made with real potatoes. Where I live they are known as funeral potatoes. That’s because whenever there is a funeral all the neighbors get together and make a meal for the family after the funeral. We serve these potatoes because they are easy to make ahead of time and cook just before the meal. Another reason is that they go really well with baked ham and we often serve baked ham for the funeral also. Truth be known at our house growing up we ate them for a lot of different special occasions, especially when we had ham. Ham and cheesy potatoes were my brother’s favorite meal so we had it quite often, usually on a Sunday afternoon. That’s because Mom had more time to cook on Sundays so she made nicer meals then.
