If you follow my blogs at all you should know that I love crock pots. I like them mostly for their convenience. I like being able to throw the ingredients in the pot in the morning and then forgetting about it. It’s like magic almost. When I come back several hours later, dinner is ready to eat. Of course, that depends on what you’re cooking, but that is the case much of the time.
Chicken is especially easy to make in the crockpot. In fact, for some of my recipes, I just take the chicken out of the freezer and throw it in the crock pot. I don’t even bother thawing it out. That really helps to make preparation easy and fast. One of myy favorite clean eating chicken crockpot recipes is #1. It’s my very own recipe I developed. So, of course, it’s one of my favorites. Plus it’s really quick and easy to make.

White chicken chili is really popular, there’s a good reason for that. It’s flavorful, light and healthy. It’s particularly easy and more flavorful when made in a slow cooker. I make this for a large group quite often. It’s easy to just throw everything into the slow cooker and let it cook while I’m getting ready. Whether I’m taking it to someone else’s house or having company come to my house. My slow cooker has handles on it with clips that hold the lid on real tight. That makes it especially easy to carry it to someone else’s house.

This crock pot chicken tikka masala is from traditional Indian cuisine but this is a simplified version. It’s not exactly like you would find in India or a authentic Indian restaurant. It is easy, simple and healthy. I use coconut milk as one of the main ingredients. I brown the chicken with the spices and onion first so it develops a nice rich flavor for the sauce. You can buy Garam Masala in a typical Indian grocery store. I’ve also seen it in some regular grocery stores. So I think it’s becoming more popular and people are loving it more.

I had a teriyaki bowl at a church party a few years ago and really liked it so I decided to try and copy it and make it a little more to my liking. I don’t love the flavor of teriyaki sauce normally so I made up a homemade sauce that isn’t as strong that I actually like better. I really like the flavor of the sauce mixed with the peppers, onions, zucchini and chicken. My version is probably a lot healthier than others and I think that’s a good thing.

I don’t like to spend a lot of time cooking so I tried to make these as I can to make. I like to make the tortillas a different day or at least earlier in the day. I think you can make the tortillas ahead a freeze them just fine. You could also make the tortillas while the fajitas are cooking if you would rather do that. I make mine with chicken because I only eat grass fed beef and I can’t afford to feed steak to my children. You could make yours with steak if you want to.

Butter Chicken is traditionally made with yogurt and spices or I’ve see versions with whipping cream but I use coconut milk because the yogurt makes it curdle while cooking.
