For one, soup is so versatile and can be easily adapted to different lifestyles. Soup is also usually easy to prepare and can be made ahead of time (definitely a plus in my book).

Another plus is that you can keep soup warm on the stove for long periods of time without the taste being compromised. This recipe is a copycat of the Olive Garden Zuppa Toscana Soup they serve. This one pot version is so much easier than other versions. You can cook the bacon and sausage in the same pot the soup is made in. The drippings from the bacon and sausage add a lot of flavor. I made mine in my dutch oven.
