Bring on the roasted garlic cauliflower dip! I have been seriously thinking about inviting people over just to have an excuse to whip this dip up! Yes, that’s how good it is. It’s flavorful, it’s packed with a lot of healthy ingredients, it doesn’t have any processed ingredients and it’s gluten-free and Clean Eating. But at the same time, is so tasty and really jam-packed with flavor that I just want to serve it with everything. The best part? It’s really easy to make, so it’s basically everything a good recipe should be.
For me, the reason why this is so delicious is because everything is roasted everything together. While most recipes call to roast the garlic in a different pan, I prefer to keep things easier (and have less dirty dishes) and roast everything in the same pan. So the garlic also adds a ton of flavor to the cauliflower, while both of them are getting roasted.
And then instead of discarding the garlic, we are also adding it to the food processor, so it packs this recipe with even a bigger punch! However, don’t be scared by the garlic! Because the roasting process mellows the flavors and caramelizes them a bit, the result is soft and good and powerful – but not overpowering at all.
While this is technically a dip and I love to serve it with veggies and gluten-free crackers, you can also use it as a sauce on top of chicken and meats and even over veggies. It’s creamy, it’s velvety, it’s super versatile and best of all it’s like a magic dip/sauce combo, so I’m pretty sure it’s going to become a staple in your home.
- 1 cup sour cream (Clean, such as Daisy)
- 1 cup greek yogurt (Clean)
- 5 garlic cloves (minced)
- 3 cups cauliflower florets
- 2 rosemary sprigs
- 1/3 cup green onions (chopped)
- to taste salt
- to taste pepper
- drizzle olive oil
Preheat oven to 350F.
Peel the garlic and place it in a greased baking pan with the cauliflower.
Top them with the rosemary sprigs and a drizzle of olive oil and roast for 30 minutes.
In a food processor, mix the cauliflowers, roasted garlic, sour cream, greek yogurt, salt, and pepper.
Pour the mix into a bowl, garnish with some extra roasted cauliflower florets and green onions.
Serve and enjoy.
